How do you make the canvas larger?

On the top menu bar:
Image > Image Size
Then set scaling to "don't rescale image" and enter your width and height (un-constrain width and height if needed).

What Rhys said, or if you mean like have the screen keep going in a scrolling way like in the demo platformer game or in Mario, download the behavior "Camera Follow Player" off StencylForge, add it to the scene, then in the scene editor click the add columns button and use that.
